My first blog posting. I read so many blogs (teacher and food mostly) that I figured I'd start my own. I have stuff to offer! Well. . . maybe not really during the summer cause my life is so boring.
Strange huh? All through the school year (well, mostly those horrid weeks after FCAT when the kids are done) I want summer. When it finally gets here, the first week is nice. I enjoy sleeping late and checking items off my "To-Do" list for the new school year. Then, the third week hits and it's like . . . *snore*. Most people would sleep, but if I sleep to much, I never fall asleep. It's a never-ending cycle.
So in the boring summer that is my life right now, I decided to cook something new for lunch. I was feeling Morrocan-y so I made a tagine (only without the really nifty tagine). It called for monkfish but since our fishmonger seemed to be all out (I don't even think I've SEEN it in Florida) and their was a sale on swordfish. I got that. Add to it a garlic (Oh yah! What dish doesn't taste better with garlic?!), lime juice, cumin, and paprika marinade. Cooked in the oven with roasted peppers, potatoes, tomatoes, and more marinade and you have a lush dish.
It has the perfect amout of garlicy-ness with the firm texture of the sworfish, the bite of the new potatoes, and the pop of the tomatoes.
Only thing that would have made it one step better would have been bread. Yup, the recipe said 'mop up those delicious juices with some crusty bread" and I didn't pay attention. I totally just drank those delicious juices and will be doing to the store before I eat leftovers.Yum-o!
